5 Minute Meals & Lemonade 🍋

Currently experiencing growing pains. They certainly hit different as an adult! I partnered with Berry Street (a virtual nutrition platform) to be able to accept insurance when I was starting out, because accepting insurance is pretty intimidating for a one woman show. That was never the end goal though. So... drum roll, please.

I'm very excited to share that Kinfolk Nutrition is now an in-network provider with Aetna and Cigna!

What does that mean?

For You: If you have Aetna or Cigna, we can work together directly without Berry Street as the middleman.

For Me: Kinfolk Nutrition's potential has expanded! 🥳

PS... Anyone else excited for the new season?!

5 Minute Meal Planning

I hear it from my clients all the time...

"I don't have time."

"I don't know how to fit another chore in."

"It's overwhelming."

"What if I forget an ingredient?"

If you work, have kids, are a caregiver, or honestly... just want a social life, meal planning can be really challenging. So why not make it simple?

Protein + Fiber + Fat + Color

That's it. And, just for you, I've built a little guide so you don't get stuck staring in the fridge hoping something will appear.

The summer drinks are in full swing, as are the ASMR videos of ice clinking, color blending shorts. While I love a summer drink myself, I have a brief PSA:

Coconut sugar, date syrup, agave, maple syrup and honey are still sugar. No, they are not refined sugar, but these natural sugars still impact your blood sugar, so be careful about spending long, hot days only drinking sweetened beverages.

If you need a swap, consider this lemonade, adapted from Jazzmine Woodward's Zobo Hibiscus Lemonade. I swapped the honey in the original recipe for monk fruit extract, a natural liquid, zero-calorie, zero-carb sweetener.

  • Step One: In 6 cups of boiled water, steep 1 cup of dried hibiscus, 2in knob of fresh turmeric, 2in knob of ginger, and 1/2 teaspoon whole cloves (or 1 tsp dried, ground cloves) in freshly boiled water. You can steep until cooled or overnight for stronger taste.
  • Step Two: Strain out the solid ingredients using a slotted spoon or a mesh strainer.
  • Step Three: Mix 1 cup off lemon juice into hibiscus tea.
  • Step Four: Mix 6-8 drops of monk fruit extract (or stevia leaf extract) into hibiscus lemonade.
